Green Couscous – Side Salad

A good-looking and tasting side salad with strong flavours. You can serve it with fish, feta or ham to make it more substantial.

What you need:

150 g couscous

1 onion

olive oil



unsalted pistachios toasted and roughly chopped

3 spring onions

1 chilli

rocket or spianch


Herb paste

20 g parsley

20g coriander

2 tbsp chopped tarragon

2 tbsp chopped mint

90 ml olive oil

How to make it: Place the couscous in a large bowl and cover with the boiling water. Cover and leave for 10 minutes.

Meanwhile, fry the onion in olive oil on a medium heat until golden and soft. Add salt and cumin and mix well. Leave to cool slightly.

Next, make the herb paste by placing all the ingredients in a food processor and blitzing until smooth. Add this to the couscous and mix everything togheter well. Now add the cooked onion, the pistachios, sping onions, green chilli and rocket and gently mix
